  • 4 heads Baby bok choy
  • 2 tbsp Peanut butter
  • 1 tbsp Soy sauce
  • 1 tbsp Lime juice
  • 2 cloves Garlic minced
  • 1 tsp Grated ginger
  • 1 tsp Chili paste (adjust according to spice preference)
  • 1 tbsp Vegetable oil
  • Salt and pepper to taste

Instructions

  • Start by washing the baby bok choy thoroughly under cold water. Trim off the ends of the stalks and separate the leaves.
  • In a small bowl, whisk together the peanut butter, soy sauce, lime juice, minced garlic, grated ginger, and chili paste until well combined. Set aside.
  • Heat the vegetable oil in a large skillet over medium heat. Add the baby bok choy and sauté for 2-3 minutes, until the leaves start to wilt.
  • Pour the Thai Peanut Sauce over the baby bok choy and toss to coat evenly. Cook for an additional 2 minutes, until the sauce has thickened slightly.
  • Season with salt and pepper to taste.
  • Remove from heat and transfer to a serving dish.
