  • 2 cups Fresh cherries, pitted
  • 1 cup All-purpose flour
  • ½ cup Granulated sugar
  • 4 large Eggs
  • cups Whole milk
  • 1 tsp Vanilla extract
  • ½ tsp Almond extract
  • Pinch of salt
  • Powdered sugar, for dusting (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round baking dish with butter or cooking spray.
  • In a large mixing bowl, whisk together the flour, granulated sugar, and salt until well combined.
  • In a separate bowl, beat the eggs until well blended. Add the milk, vanilla extract, and almond extract to the beaten eggs and mix until fully incorporated.
  • Gradually add the wet ingredients to the dry ingredients, whisking continuously to create a smooth batter.
  • Gently fold in the pitted cherries, ensuring they are evenly distributed throughout the batter.
  • Pour the batter into the prepared baking dish, spreading it out evenly.
  • Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the clafoutis is set and golden brown on top.
  • Remove the clafoutis from the oven and let it cool for a few minutes. Dust with powdered sugar, if desired, before serving.

Tips for Making the Perfect Cherry Clafoutis

  • Use fresh, ripe cherries for the best flavor. If fresh cherries are not available, frozen cherries can be used as a substitute.
