Ingredients
500gramsBlack beans
500gramsPork shoulder
500gramsBeef ribs
500Smoked sausage
1largeOnion, finely chopped
4clovesGarlic, minced
2Bay leaves
1tbspOlive oil
Salt and pepper to taste
Instructions
Start by soaking the black beans overnight. Rinse them thoroughly before cooking.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant.
Add the pork shoulder and beef ribs to the pot, and brown them on all sides. This will help enhance the flavor of the stew.
Once the meat is browned, add the soaked black beans, bay leaves, and enough water to cover the ingredients. Bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beans are tender and the meat is cooked through.
While the stew is simmering, prepare the smoked sausage by slicing it into bite-sized pieces. Add the sausage to the pot and continue to simmer for another 30 minutes.
Season the Feijoada with salt and pepper to taste. Remove the bay leaves before serving.

Tips and Variations for Making the Perfect Feijoada
For a smokier flavor, you can add a few slices of smoked bacon to the stew.
If you prefer a spicier Feijoada, you can add some chopped chili peppers or a dash of hot sauce.
Some traditional Feijoada recipes call for adding dried beef or pig's ear and tail for added texture and flavor.
To enhance the richness of the stew, you can serve it with a side of white rice and orange slices.
