Ingredients

  • 41 g Extra virgin olive oil
  • 172 g Chopped onions
  • 10 g Chopped garlic
  • 185 g (1 large carrot) , chopped )
  • 46 g Chopped celery
  • 394 g (2 cups of dried lentils )
  • 450 g Crushed tomato
  • 7 cups Water
  • 4 g Bouillon (1 cube)
  • 1 g (1 ½ tsp paprika)
  • 1 Dried bay leaf
  • ½ tsp Salt
  • ½ tsp Pepper

Instructions

  • Heat oil in a dutch oven over medium heat. Add chopped onions, carrots, and celery.
  • Cook and stir until onion is tender, 4 to 6 minutes.
  • Add garlic, bay leaf, oregano and any other spices you prefer; cook for another 7 minutes.
  • Add water and crushed tomatoes. Bring to a boil. Stir in lentils and reduce heat and let simmer until lentils are tender for at least 1 hour.
  • Season with salt and pepper; taste and adjust as needed.
  • Serve hot and enjoy!
