Equipment

  • 1 Cooking Pot
  • 1 Baking sheet

Ingredients

  • 1 head Garlic
  • 8 ounces Of spaghetti
  • 4 slices Of bacon, chopped
  • 2 large Eggs
  • ½ cup Grated Parmesan cheese
  • ½ cup Heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

Steps to Roast Garlic for the Carbonara:

  • Preheat your oven to 400°F (200°C).
  • Peel off the loose outer layers of the garlic bulb, leaving the individual cloves intact.
  • Slice off the top of the garlic bulb to expose the cloves.
  • Place the garlic bulb on a sheet of aluminum foil and drizzle it with olive oil.
  • Wrap the garlic bulb tightly in the foil and place it on a baking sheet.
  • Roast the garlic in the preheated oven for about 40 minutes, or until the cloves are soft and golden brown.
  • Once roasted, remove the garlic from the oven and let it cool before squeezing out the cloves.

Cooking the Pasta for Roasted Garlic Carbonara:

  • Fill a large pot with water and bring it to a boil.
  • Add a generous amount of salt to the boiling water.
  • Add the spaghetti to the boiling water and cook it according to the package instructions, usually around 8-10 minutes, or until al dente.
  • Once the spaghetti is cooked, drain it well and set it aside.

Making the Creamy Sauce for Roasted Garlic Carbonara:

  • In a medium bowl, whisk together the eggs, Parmesan cheese, and heavy cream until well combined.
  • Season the sauce with salt and pepper to taste.
  • Set the sauce aside while you prepare the remaining ingredients.

Combining the Pasta, Sauce, and Roasted Garlic:

  • In a large skillet, cook the chopped bacon over medium heat until crispy.
  • Remove the cooked bacon from the skillet and set it aside on a plate lined with paper towels to drain excess grease.
  • In the same skillet, add the roasted garlic cloves and cook them for a few minutes until fragrant and slightly caramelized.
  • Add the cooked spaghetti to the skillet with the roasted garlic cloves and toss to combine.
  • Pour the creamy sauce over the spaghetti and toss until the pasta is evenly coated.
  • Add the crispy bacon back to the skillet and gently toss to incorporate.
  • Cook the pasta over low heat for a few minutes, stirring constantly, until the sauce thickens slightly and coats the spaghetti.
  • Remove the skillet from heat and let the pasta rest for a minute or two before serving.
